Favorite Summer Sandwich

I grilled tomato/cheese/bacon open-faced sandwiches for supper.

It is one of our favorite evening meals – especially with fresh, local tomatoes.

#1 Turn the oven on broil.

#2 Lightly butter one side of a piece of bread, then put the buttered side on a cookie sheet. Broil ’til lightly toasted.

#3 Remove from oven and add tomato slices – and onion slices if desired. Salt and pepper to taste. Broil until the tomato is hot.

#4 Add cheese and crumbled bacon. Broil until cheese is bubbly and starting to brown.
