If you follow my blog and enjoyed our recent trip to Belgium, you may remember that I chose zucchini soup when we visited the Inn at Bokrijk – the open-air museum of 1900s historical buildings.
I decided then to try to replicate the soup because I found it to be delicious. I am a fan of pureed soups.
I often make tomato soup – especially in winter – but have never tried zucchini soup.
The opportunity was given me the other week on our church’s “Share the Harvest” table. Notice the yellow zucchini. These harvest items are brought to church each Sunday during the harvest season (August and September). It is quite popular with our church members, and the table is usually empty by the time everyone goes home. 🙂
I checked several on-line zucchini soups and found one that looked like what I thought the Belgium soup tasted like. We were very pleased with the results.
This is the recipe I used.
