I looked up corn and bacon dishes, then created my own. Cerwin thought it was even better than the one he had at Devon. 🙂
I started with a bag of fresh-frozen corn (about 2 cups), added real bacon chips (from Costco) and maybe two teaspoons of chopped, fresh onion. Then two pinches of sugar and salt and pepper to taste. I cooked the mixture until the corn and onions were hot.
To finish: I used about 3/4 cup of milk and two tablespoons of flour and mixed until the flour was dissolved (I use a Tupperware shaker), then poured slowly and stirred into the hot mixture.
It was kind of like a corn chowder.
It doesn’t look like theirs, but it tasted similar. It looks like they also had chopped red and green pepper in theirs. The corn was probably creamed in a blender and because it is very yellow, there may have been egg or maybe they used all yellow corn. Mine was a mixture of white and yellow corn.
I will make “my version” again, because it was quite popular with Cerwin.
