End-of-Year-Soup

This is what happens at our house when it’s the last day of the year and we are leaving the house for five days. End-of-the-year-clean-out-the-refrigerator-soup. πŸ™‚

I started out with a pound of hamburger, 2 cans of diced tomatoes, a small bag of uncooked rice, a bag of frozen mixed vegetables, a bag of frozen corn, and water to make the right thickness. After that it was leftovers: 1/2 cup of beef and rice casserole – made by Deb – which added a smoky flavor; about 1 tablespoon of each – honey, raspberry and strawberry jelly and apple butter – emptied those jars; half a cup of apple sauce – emptied that jar; then spices and salt and pepper to taste. I left it stew for about an hour and checked on the taste. It was still a bit tart to my taste, so I added a 1/4 cup of brown sugar. Perfect!

Despite those ingredients, it turned into great-tasting soup. πŸ™‚

We enjoyed soup for supper, then took two quart to Maine and froze another 3 containers – about two quart each.

Just tonight (January 13) Cerwin said it was time to get one of the containers out of the refrigerator. So I think he liked it too.
