It was the perfect thing to do on a cold, dreary December day – make tomato soup using leftovers from our Christmas taco salad.
I had a bowl of cubed tomatoes, lots of onions and sweet peppers, so tomato soup seemed like the perfect choice. Plus, I added four cans of diced tomatoes, spices like celery, oregano, garlic, salt, pepper and brown sugar to taste.
After letting it “stew” for the afternoon, we enjoyed a bowl of this delicious soup for supper – along with grilled cheese sandwiches made with rye bread. Oh, yum!
I think it was even better the next day when I had a cup for lunch.
