I saw this breakfast suggestion, I think on Facebook, the other week and decided to try it.
I took this photo before I flipped the eggs – because it looked nicer this way. 🙂
I fried sweet potato pieces with chopped onion and green pepper – added salt and pepper to taste – then made openings for the three eggs.
Cerwin said that I should make it again.
This looks delicious! And sounds simple enough that even I should be able to make it! 🙂
I usually have frozen sweet potato chunks (from Schwans) and they worked perfectly.
